Is our data in Switzerland with Microsoft 365?

For an account created in Switzerland, it is stored there; the vendor remains subject to US law. Storage location and applicable law are two different things.

Will we lose e-mails during the migration?

No: a copy before the switchover, then a second one after; the old mailbox remains accessible for a month.

Do we still need a server in the office?

Often not for office work; for large files, a NAS remains more convenient (see Servers & NAS).

Does the cloud mean you no longer need backups?

No: no provider will restore a folder deleted six months ago. See backup.
